Most of the sludge generated in the production of shochu has, apart
from some provided to farmers, been dumped into the oceans even
though such shochu lees contain active ingredients. This is because
shochu lees quickly go rotten so it is difficult to keep them for
a long time. However, in accordance with the Convention on the Prevention
of Marine Pollution by Dumping of Wastes and Other Matter, a London
convention, dumping shochu lees should be strictly controlled. As
a result the shochu industry has attempted to dispose all shochu
lees on land. Under these circumstances, we have created a facility
for recycling Kuma Shochu lees that collects the active ingredients
of shochu lees so as to dispose of them properly using a variety
of methods. The solid contents of shochu lees contain plenty of
proteins and starch whereas the liquid part contains a slight amount
of the active ingredients of alcohol. By using this facility shochu
lees are split, concentrated and distilled allowing almost all the
active ingredients of shochu lees to be recycled and used as fertilizer,
animal fodder or fuel. |
